First, if the student has content written, I have them re-read the essay. I find that reading aloud ones work helps the student identify areas in which they may improve.
I also relate a subject that the student is interested in with the material at hand.
For example, if a student struggles with the format of an essay, but enjoys the NFL, I ask the student to tell me three aspects of football that they enjoy. The NFL becomes the introduction paragraph and those three favorite things then become the body paragraphs.
